PC Italian Sausage Tortellini Soup
Monday, the start of a new week. We've had a weather shift in Kansas, and if there was any doubt before, doubt no more. Fall is HERE! It's cold outside, the wind was fierce this past weekend and the leaves are fully changing. My furnace has even kicked on once or twice. YIKES! I'm not sure that I'm ready for that.
What I am ready for, though, is more soup! And this pressure cooker soup is sure to please. Use your electric pressure cooker to whip up this hearty Italian Sausage Tortellini Soup in no time flat.
If you aren't a pork fan, sub this out for turkey sausage or even the meat substitutes available these days. If you sub this out for a less flavorful protein, just amp up your spices, add a little oregano, thyme, fennel and maybe a little crushed red pepper for some zip.
This goes great with some crusty Italian bread and some freshly grated parmesan cheese on top.

1 tablespoon olive oil
1 pound ground Italian Sausage
1/2 medium onion, diced
1 tablespoon minced garlic
2 tablespoons tomato paste
1-28 oz can crushed tomatoes
4 cups low sodium chicken broth
2 tablespoons fresh chopped basil
1 teaspoon salt
1/2 teaspoon pepper
1 9-ounce package refrigerated
cheese tortellini
2 cups packed fresh spinach
1. Place insert in pressure cooker and turn on to sauté, add oil.
2. Add onion and sauté until soft, then crumble in Italian sausage and brown.
3. Add garlic and sauté for 1-2 minutes. Then add tomato paste and sauté 2 minutes longer.
4. Stir in crushed tomatoes, salt, pepper, basil and chicken broth.
5. Add tortellini, place lid on pressure cooker and set to high pressure for 4 minutes.
6. When cooking is complete, do a quick release to release pressure.
7. Return pot to sauté and add spinach and stir until slightly wilted.
Serve with crusty bread and shredded parmesan.
