Toffee Chocolate Chip Cookies



Sometimes you have days where you just have to say, thank you Lord.  Today is one of those.  Jason and I had quite the adventure Sunday night/ early Monday morning.  Our carbon monoxide detector went off a little after 11:30 Sunday night and our Brinks Home Security system alerted us and also notified the local fire department that we had an issue.  

Well, two fire trucks and an ambulance later we had a driveway full of firefighters all decked out in protective gear marching into our house to check it out.  Sure enough we had an issue with our water heater venting properly.  Thankfully, our CO detectors did their job and our security company was totally on it and all we had was a minor inconvenience of standing in the driveway talking to our firemen for about an hour while the house aired out and was safe for us to return.  

We are so grateful and blessed, the Good Lord was watching out for us (along with our Brinks Home Security system) and we avoided what could have been a fatal issue.  

As we stood in the driveway talking to the firemen, I joked with them that there were homemade blueberry muffins on the counter if they wanted a snack and their eyes lit up.  That's when I said.... "or I could just make you cookies or cinnamon rolls or something and bring them to the station".  Well that garnered a round of smiles and a reply of "not tomorrow, wait until we are back on shift again, come Tuesday".

Well, suffice it to say I don't think they really thought I'd come through.  Little do they know MamaFin.  Tonight, Jason and I drove to the fire station with 2 dozen maple frosted cinnamon rolls and 3 dozen toffee chocolate chip cookies as a thank you to the men for coming out and making our home safe for us in the wee hours of the morning.  They were surprised and thrilled when we rang their bell.  I'm pretty sure they'll leave half a cookie and half a cinnamon roll for the next shift.  LOL!

Toffee Chocolate Chip Cookies

Ingredients:

1 c unsalted butter, softened to room temp

3/4 c sugar

1 c light brown sugar, packed

2 large eggs

1 t vanilla

3 c all-purpose flour

1 1/2 t baking soda

1 t salt

2-3 c of toffee pieces (like Heath bars) and mini chocolate chips (total)


Directions:

1.   In a large stand mixer, cream together:  butter, sugar, brown sugar, eggs, vanilla, baking soda and salt.

2.  Add half of flour and mix well.

3.  Add remaining flour and mix well.

4.  Stir in (with a spatula) toffee pieces and mini chocolate chips

5.  Bake on a Pam'ed cookie sheet for 8-10 minutes at 375 degrees

6.  Space 2-3 inches apart (I like to put 12 per sheet)

7.  Bake until barely turning light golden brown
