Pressure Cooker Churro Cake Bites


Well, it's July... in Kansas.  You know what that means.  It's hot, darn hot, real hot.  Hotter than a snake's butt in a wagon rut, hot.  

If you are anything like me, you don't even want to think about turning on the oven.  But you still want a nice dessert or sweet treat every now and again, even in the heat of the summer.  

Well, have I got an easy peasy treat for you.  And it's made in your handy dandy pressure cooker.  Gotta love that.  Bonus, it uses those silicone egg bite molds you probably have in your arsenal of pressure cooker tools, so let's put those babies to use!  

They are cinnamony, tasty delicious little bites of heaven.  Serve with ice cream and HELLO your family will love ya.

Pressure Cooker Churro Inspired Cake Bites

Ingredients:

1 box Krusteaz cinnamon coffee cake mix (also used for muffins)

2 eggs

1 c water

4 T powdered buttermilk

1 ½ t cinnamon

1 tsp vanilla

Sugar

Cinnamon



Directions:

1.     Make sure insert is in pressure cooker.

2.     In a medium bowl, combine cake mix, ¾ cup of included cinnamon/sugar mixture (in  

        the box with the cake mix), eggs, buttermilk, and cinnamon until smooth.

3.     Spray two egg bite molds with non-stick spray.

4.     Using a medium cookie scoop fill molds ¾ of the way full (do not overfill).

5.     Cover egg molds tightly with foil.

6.     Add 1.5 cups water to pressure cooker insert.

7.     Add trivet to insert.

8.     Use a sling to lower egg molds into insert. (you can stack 2 trays in the insert)

9.     Set at high pressure for 12 minutes.

10.   When cook time is complete, let naturally release for 15 minutes.

11.   Remove egg bite molds and set on cooling rack, remove foil.

12.   All to cool for just a couple of minutes.

13.   On a separate plate place remaining cinnamon/sugar mixture from box.

14.   Gently remove the cake bites from molds and roll in cinnamon sugar mixture, while 

        warm, it will stick. 

15.   Sprinkle with cinnamon and sugar, serve.
