Key Lime Pie



Hey ya'll.  Welcome back to MamaFin's kitchen.  It's Sunday, it's hot and feeling like summer.  What's better in the summer?  How about a fresh, citrus-y, key lime pie?  Yes, please. 

This pie comes together in snap, and it tastes amazing.  Two things make a huge difference on this.  

First, the key lime juice.  Key limes are not always available in your local grocery store.  But you can find Key Lime Juice.  This one, from Nellie and Joe's is my FAVORITE!  If you can't find it in the juice aisle of your local Dillons (www.dillons.com), aka Kroger, look on Amazon.  You can usually find it there, or straight from Nellie and Joe's.

  

The second thing that I think really makes this is the Ginger Vanilla, from my friends at Vain Foods.  They are local to Kansas City and I LOVE their Vanilla.  Check them out here.....

Key Lime Pie

Ingredients:
1 9" prepared graham cracker pie crust
1/2 c Nellie and Joe's Key Lime Juice
1 14 oz. can of sweetened condensed milk
3 egg yolks
1 t vanilla
pinch of salt
3 limes
Prepared whipped cream


Directions:

1.  Preheat oven to 350 degrees (F).
2.  In a mixing bowl combine key lime juice, condensed milk, egg yolks, vanilla and salt.
3.  Whisk together until well combined.
4.  Zest one lime into mixture and stir.
5.  Pour into graham cracker crust.
6.  Bake at 350 degrees (F) for 15 minutes.
7.  Remove to cooling rack and cool for 10 minutes.
8.  Cover and chill 6-8 hours (overnight works).
9.  Remove from refrigerator and top with prepared whipped cream, sliced limes and zest of lime for garnish.
10.  Serve and enjoy.
11.  Refrigerate any leftovers.
