Pressure Cooker Spaghetti Carbonara


Oh my goodness!  It's summer and it's hot.  Do any of us want to turn on the oven, I don't think so..... yikes.  Here's a great pressure cooker meal for you and your family on a weeknight that you can get put together in a flash.  I love using my Instant Pot for quick, made from scratch, weeknight meals.

After months at home, we can all use a little inspiration in our cooking.  This pressure cooker spaghetti carbonara is just the ticket.  You probably have all of these ingredients in your kitchen.  Now, you might not have pancetta.... just substitute bacon.  If you don't have a shallot, substitute half of sweet yellow onion.  Voila... you're ready to rock and roll.

Pressure Cooker Spaghetti Carbonara

Ingredients:

12 oz uncooked spaghetti, broken in half

½ c. Pancetta, diced

1 shallot, diced

5 cloves of garlic, sliced thinly

Olive Oil

¼ t crushed red pepper

1 t salt

1 t pepper

3 eggs, beaten

½ c parmesan shredded finely

2 c Chicken Broth

1 c water (hot)

½ c dry white wine

½ c fresh parsley, chopped finely



Directions:

1.     Make sure insert is in the pressure cooker
2.     Turn pot on to Saute
3.     Add Olive oil and then brown pancetta
4.     Add Garlic and shallot, saute for 1 minute
5.     Add wine and deglaze pot, burning off the alcohol
6.     Add water and broth
7.     Salt, Pepper and add crushed red pepper (leave out for less spice)
8.     Set pot to LOW pressure for 5 minutes and turn KEEP Warm feature off
9.     Add spaghetti and make sure it is under the liquid
10.  When cook time is completed, release pressure with quick release
11.  Remove from cooker, stir in eggs and parmesan cheese
12.  Serve immediately sprinkled with parsley
